Buying Chicken From Wholesale

simple fish soup and vegetables to the Portuguese

I definitely very hard to get back to the blog. I must say that I have not spent Christmas Day or New Year's at home and that little so I cooked for the holidays. Is wishing you a happy new year I'll be back. And with the first recipe in 2011: a soup "Detox" as light as tasty ...

Ingredients for 4-5 people
  • 2 slices of white fish (cod, whiting, hake ...)
  • 1.2 l of broth
  • 2 medium potatoes cut small
  • dice 1 leek cut into thin half moons
  • 1 large carrot, thinly sliced 1 onion, finely
  • chopped
  • 6 large lettuce leaves, cut into julienne
  • 4 tablespoons olive oil
  • salt & pepper
  • 1 / 2 bunch fresh cilantro Preparation

Put the fish slices in a saucepan and cover with cold broth. Heat the pan and remove from heat when boiling. Let cool in pan.

Pour half the olive oil in a large pot. Heat and add chopped onion. Sauté until onion is tender.

Add the half-moons of leek, diced potatoes, sliced carrots and julienne lettuce. Sauté for 2-3 minutes, stirring often.

Meanwhile, remove the slices of fish broth and set aside on a plate. Strain the broth and pour it in the pan over the vegetables.

Drizzle with remaining olive oil and bring to a boil. Cook for 15 minutes over low heat until vegetables are cooked is.

Remove saucepan from heat and remove about 1 / 3 vegetables. Reduce them in soup using a blender or food plunging. Mix the soup to the soup and got warm.

Remove skin and bones of fish slices. Shred the meat coarsely and add to soup. Cook for another 5 minutes and adjust seasoning.

Remove soup from heat. Sprinkle with chopped coriander before and serve immediately.
